A product of culinary cross-culture, it’s ideal for those times when you crave something filling and full of flavor but can’t afford to spend hours in the kitchen. It’s a crowd-pleaser at potlucks or just a perfect dinner for a laid-back Tuesday night – embodying my own blend of Mexican roots and Midwestern casserole charm.

To really bring this dish to life, serve it with fresh toppings like a dollop of sour cream, a sprinkle of fresh cilantro, and some diced avocado. Pair it with a simple green salad, cilantro-lime rice, or even a side of refried beans for an added protein boost.

Slow Cooker Mexican Taco Casserole

Servings: 6-8

Ingredients:

2 lbs. baby yellow potatoes

2 tbsp. olive oil

2 cloves garlic, minced

1 tsp. dried thyme

1 tsp. dried rosemary

1 tsp. dried oregano

1/2 tsp. salt

1/4 tsp. black pepper

1/2 cup grated Parmesan cheese

2 tbsp. chopped fresh parsley (optional for garnish)

Directions:

Cut the baby yellow potatoes in half or quarters (or leave whole if preferred) and place them in the slow cooker.

In a small bowl, mix olive oil, garlic, thyme, rosemary, oregano, salt, and pepper.

Drizzle the oil and herb mixture over the potatoes in the slow cooker, ensuring each potato is well-coated.

Cover and cook on high for 2-3 hours or low for 4-6 hours, stirring occasionally.

Once the potatoes are tender, sprinkle with grated Parmesan cheese, stir until the cheese melts and coats the potatoes evenly.
