1 cup unsalted butter, softened
1 cup granulated sugar
1 cup cottage cheese, well-drained
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips or chunks
1/2 cup chopped nuts (optional)
Preparation:
Preheat the Oven: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Creaming the Butter and Sugar:
In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
Incorporate Wet Ingredients:
Add in the well-drained cottage cheese, egg, and vanilla extract. Mix until well combined.
Sift Dry Ingredients:
In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.
Combine Wet and Dry Ingredients:
Gradually add the sifted dry ingredients to the wet ingredients, mixing just until the dough comes together.
Fold in Mix-Ins:
Gently fold in the chocolate chips or chunks and chopped nuts (if using) until evenly distributed throughout the dough.
Shape Cookies:
Drop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
Bake:
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may seem slightly undercooked but will firm up as they cool.
Cooling:
Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
